The evening begins with a private valet transfer into the fortified walls of the citadel, followed by a descent into the island’s oldest wine cellar for a tasting. From there, guests ascend to the panoramic rooftop for appetizers overlooking the cathedral and the shimmering Mediterranean harbor. The main event unfolds in the neoclassical dining room, where high-tech audiovisual projections and live operatic performances complement a masterful tasting menu. With only 36 to 60 covers per night, the atmosphere is intensely exclusive and intimate, designed to evoke the "Golden Twenties" through every detail, from the white-gloved butler service to the secret private club for late-night cocktails.
